Is it just me or are cookies always on the brain? Cookies have a special place in my heart, they have always been my favorite dessert to make and eat since I can remember. Not only that, but cookies with {dairy free} ice cream are one my favorite indulgences.
I have to admit, it was my love of both cookies and ice cream that inspired me to create these delicious chocolate cherry chunk cookies. In fact, it was Ben and Jerry’s Cherry Garcia Ice Cream that provided me with the vision to create these cookies.

There’s something about the combination of the cherry and chocolate that causes my tastebuds to do a happy dance. These cookies are SO GOOD that even my entire non gluten free/allergy family enjoyed them.

Cherry Chocolate Chunk Cookies - Vegan, Gluten Free, Dairy Free & Soy Free
Cherry Garcia who? These cherry chocolate chunk cookies are guaranteed WOW your tastebuds! You won't even know they are vegan, gluten, dairy and soy free.
Ingredients
- 2 1/4 cups All Purpose Gluten Free Flour I use Arrowhead Mills
- 4 tsp Rumford Aluminum Free Baking Powder Any baking powder will do, this is just my preferred brand
- 1 tbsp Xanthan Gum this will allow the cookies to be puffy and not flat
- 1 tsp Salt
- 2 sticks Earth Balance Vegan Soy Free Butter
- 6 tbsp Aquafaba You can also use 2 regular eggs if not vegan
- 3/4 cup Organic Cane Sugar
- 3/4 cup Brown Sugar packed
- 1 tsp Vanilla Extract
- 1 tsp Almond Extract
- 1/2 bag Enjoy Life Foods Chocolate Chunks
- 1 jar Tillen Farms Merry Maraschino Cherries
Instructions

Pre-heat oven to 375°

In a small bowl combine flour, baking powder, xanthan gum and salt. Set aside.

In a medium bowl beat butter, aquafaba, sugar, brown sugar, vanilla and almond extracts together until creamy. Gradually add in flour mixture until fully combined.

Drain maraschino cherries and pat dry with a paper towel. De-stem and chop maraschino cherries into quarters.

Stir in chocolate chunks and cherries until evenly distributed throughout batter.

Line baking tray with parchment paper. Roll cookies into 1-2 inch balls and bake for 12 minutes or until golden brown.

Let cookies cool for 15 minutes and enjoy!

Hi Anna, Xanthan gum does not contain soy, however it is possible that it could be derived from soy, although it is most commonly derived from corn.
