Avocado lovers and mac n’ cheese lovers unite! This avocado-mac hybrid is one of the most delicious green things you can eat (besides avocados themselves!)
Cook macaroni noodles as per directions on the box. Drain and set aside.
In a mixing bowl, combine avocados, cream cheese, garlic, almond milk, salt & pepper. Beat until a creamy texture is reached. You may need to add a little more milk but be careful not to add too much, you don’t want the mixture to become watery!
Add cooked noodles to the avocado cream; toss until all noodles are covered.
Pour mac n’ cheese into oven safe baking container(s) top with breadcrumbs and shredded cheese. (NOTE: You can add cheese to the top after it is baked as shown in photos)
