  • 2 1/4 cups All Purpose Gluten Free Flour I use Arrowhead Mills
  • 4 tsp Rumford Aluminum Free Baking Powder Any baking powder will do, this is just my preferred brand
  • 1 tbsp Xanthan Gum this will allow the cookies to be puffy and not flat
  • 1 tsp Salt
  • 2 sticks Earth Balance Vegan Soy Free Butter
  • 6 tbsp Aquafaba You can also use 2 regular eggs if not vegan
  • 3/4 cup Organic Cane Sugar
  • 3/4 cup Brown Sugar packed
  • 1 tsp Vanilla Extract
  • 1 tsp Almond Extract
  • 1/2 bag Enjoy Life Foods Chocolate Chunks
  • 1 jar Tillen Farms Merry Maraschino Cherries


  1. Pre-heat oven to 375°

  2. In a small bowl combine flour, baking powder, xanthan gum and salt. Set aside.

  3. In a medium bowl beat butter, aquafaba, sugar, brown sugar, vanilla and almond extracts together until creamy. Gradually add in flour mixture until fully combined. 

  4. Drain maraschino cherries and pat dry with a paper towel. De-stem and chop maraschino cherries into quarters. 

  5. Stir in chocolate chunks and cherries until evenly distributed throughout batter. 

  6. Line baking tray with parchment paper. Roll cookies into 1-2 inch balls and bake for 12 minutes or until golden brown. 

  7. Let cookies cool for 15 minutes and enjoy!
