These gluten and dairy free french toast casserole bites are the perfect on the go breakfast! They are also great for kids and sleepover parties. My mother always used to make french toast casserole anytime we had a sleepover as children, and I always loved when she did because it was so yummy.
It wasn’t until I was in the middle of the grocery store one day, buying my usual staples that the idea to turn this yummy casserole into little bites came to life! The inner child in me was so E C S T A T I C that I may have done a little happy dance mid-aisle (embarrassing myself in public is nothing new to me).
This recipe is so easy and only requires a few things:
- Wilton Silicone Baking Mold
- 1 Loaf of Gluten Free Bread
- 6 Farm Fresh Eggs
- 1 TBSP Vanilla Extract
- 1 Cup Dairy Free Milk
- 2 TBSP Cinnamon
These little bites are made in a silicone baking mold (I LOVE silicone baking molds, they are SO easy to clean, not to mention everything slips out so easily). The one I used to make these adorable heart shaped ones is by Wilton and it is one of my favorites. They also make a flower one which I love to use in the springtime! Keep in mind this recipe is made in 3 silicone mold trays, however, you can just use one and put the rest in a traditional casserole dish if you do not have 3 on hand.

- 3 Silicone Baking Molds If you don't have 3, one is fine and you can put the rest in a casserole dish. A muffin pan can also work, just make sure that you grease the cups thoroughly.
- 1 Loaf Gluten Free Bread
- 6 Farm Fresh Eggs
- 1 TBSP Vanilla Extract
- 1 Cup Dairy Free Milk
- 2 TBSP Cinnamon
- Organic Powdered Sugar To dust on top

- Pre-heat oven to 400°
- Slice bread into smaller pieces, like squares. Do this in groups of 4-5 slices of bread until the whole loaf is cut. Set aside.
- In a mixing bowl combine the 6 eggs, milk, vanilla and cinnamon. Mix together.
- Add bread to the egg mixture. Toss until evenly coated. If some of the bread pieces break a little, it is ok.
- Scoop into molds, cover with foil and refrigerate for at least an hour. For maximum french toast flavor, prepare this before bed refrigerate overnight and bake it in the morning.
- Bake or 40-45minutes leaving the molds covered in foil.
- Let cool for 5 minutes, then flip the molds upside down on a sheet of parchment paper to release the french toast bites.
- Dust with powdered sugar (OPTIONAL) and enjoy with your favorite syrup!
