Rice Krispies have always been one of my favorite treats! The combination of sweet and crunchy always satisfies my sweet tooth. My mother and I used to make them almost weekly when I was a child.
I especially LOVE my version of these ‘krispies’ because they are allergy friendly, so everyone can enjoy!Â
This recipe is so easy it should take you no longer than 10 minutes to make and it is even super fun to do with the kids. You can even cut the krispies into different shapes using a cookie cutter. To do that, spread the krispies out on parchment paper and use the cookie cutter to cut out the shape you desire (while the mixture is still hot) and continue like you would with sugar cut out cookies.
All you need to make these Yummy Vegan Rice Krispies is 5 ingredients:
- Dandies Marshmallows
- One Degree Organics rice crisps
- Earth Balance vegan butter
- Organic Coconut Oil
- Vanilla Extract
You will also need a large pot, a spoon, a glass pyrex container and a mixing bowl, but you likely already have those.

- 5 Cups Gluten Free Rice Crisps I use One Degree Organic Sprouted Rice Crisp Cereal. Traditional Rice Krispies can pose risk for those with Celiac or Gluten Allergy.
- 1 Bag Dandies Marshmallows I prefer the mini (they melt easier), but the full size work just as well.
- 3 TBSP Earth Balance Organic Vegan Butter
- 2 TBSP Organic Coconut Oil *Optional, if not used, use butter in its place.
- 1/2 TBSP Vanilla Extract

- In a large pot add butter and coconut oil and heat on medium until everything is melted together.
- Add marshmallows to pot. Mix in with the butter mixture on low/medium heat until marshmallows are fully melted. Stir constantly to avoid burning. This could take up to 10 minutes.
- Turn heat off. Add melted marshmallows into a large mixing bowl, add vanilla & rice crisps. Mix until rice crisps are fully covered.
- Once everything is combined, press into buttered glass container with wet fingers (this is so your hands do not become sticky and have the rice krispies get stuck to your fingers).
- Let cool for at least 15 minutes.
