Avocado lovers and mac n’ cheese lovers unite! This recipe is the best of both worlds (or 3 worlds for those that have dietary restrictions, like me).Â
I know, I know, it doesn’t look the most appetizing, but don’t judge a book by its cover! When I first made this I too had mixed feelings on whether or not it would be good, and trust me it’s DELICIOUS.
This avocado-mac hybrid is one of the most delicious green things you can eat (besides avocados themselves!)
This recipe is SO easy to make and makes enough to feed the whole family! The best part is that you don’t have to worry about bribing the kids to eat their green veggies because they are already mixed in.
This avocado mac n’ cheese is perfect all year round, especially on ‘green’ holidays like St. Patrick’s Day or for Christmas as the Grinch’s mac n’ cheese. Get creative and have fun in the kitchen because cooking is fun! (Although, the dishes aren’t)

- 1 Box Gluten Free Macaroni Noodles
- 3 Organic Avocados
- 1/3 Cup Organic Unsweetened Almond Milk
- 1 Container Dairy Free/Vegan Cream Cheese My favorite is Daiya brand.
- 2 TBSP Black Pepper
- 1/2 TBSP Pink Salt
- 3 Cloves garlic
- 4 TBSP Gluten Free Bread Crumbs Optional
- 1 Handful Dairy Free/Vegan Mozzarella or Parmesan shreds

- Preheat oven to 400°
- Cook macaroni noodles as per directions on the box. Drain and set aside.
- In a mixing bowl, combine avocados, cream cheese, garlic, almond milk, salt & pepper. Beat until a creamy texture is reached. You may need to add a little more milk but be careful not to add too much, you don't want the mixture to become watery!
- Add cooked noodles to the avocado cream; toss until all noodles are covered.
- Pour mac n' cheese into oven safe baking container(s) top with breadcrumbs and shredded cheese. (NOTE: You can add cheese to the top after it is baked as shown in photos)
- Bake for 15 minutes & ENJOY!
